You guys, I have another recipe alert! - Peanut butter blossom cookie recipe
Okay, I know I literally just posted that banana bread recipe, but it's the ADHD in me—I'm currently obsessed with baking, so... sue me! Although, I think it might also be because I used the infamous D-word (No not that one!🙄… It’s DIET), and now my brain is punishing me by demanding all the sugar in the world in one go.
“Diet,” because yes—I'm jetting off again,✈️ and I wanted to lose a few pounds to offset the inevitable holiday calories I’m definitely going to gain.
Anyway! A few months back, at my nephew’s 1st birthday, I had one of the best cookies ever. I know I say that all the time, but I promise—they were the best! At first, I thought they were store-bought because they looked amazing and were in one of those cute takeaway boxes. But surprise! My sister-in-law actually baked them. I was shocked. They were just way too good, and I’ve been craving them ever since. In fact, I requested these a couple last month… but my little sister ate most of them and left me none! I know. Rude right! 😭
So, this weekend, I asked my sister-in-law to make them with me. And by “with me,” I meant a joint effort. We bake. We bond. But nope—she did all the work while I supervised and provided entertainment (which, let’s be honest, is an important job 😂).
In my defence, I was planning to bake them myself with her supervising, but I ended up cutting my thumb quite badly with a razor and… let’s just say it hurt like hell. (I really wanted to use the B-word there, but I’m a lady… so we’ll keep it classy. 😅)
Also—can you believe I’ve never baked cookies before? Actually, you probably can, because like I said, I’m not much of a baker aside from the four cakes I sort of know how to make.
Anyway, here’s the recipe (Disclaimer included 😜):
Important Note:
K has a whole labour-of-love thing going on with these cookies, so I can’t guarantee yours will taste quite like hers. I’m happy to share the recipe… but I’m not sharing my sister-in-law. 😆
🍪 Ingredients:
1/2 cup brown sugar
1/2 cup caster sugar
1/2 cup butter (salted) – must be at room temperature
1/2 cup smooth peanut butter
1 egg
1 1/2 cups plain flour
3/4 tsp baking soda
1/2 tsp baking powder
Approx. 2 tablespoons of sugar (for coating the cookie dough)
A pack of Hershey’s Kisses or chocolate buttons (for the cookie tops)
🔥 Instructions:
1. Preheat the oven to 375°F (190°C).
2. Mix the butter, sugars, peanut butter, and egg until smooth.
3. Combine all the dry ingredients.
4. Slowly mix the dry ingredients with the wet until fully combined.
5. Shape the dough into small gold ball-sized rounds.
6. Roll each ball in sugar.
7. Space them out on a baking tray—leave room for them to spread!
8. Bake for 8–10 minutes.
9. As soon as they’re out, place them on a cooling rack and press a Hershey’s Kiss or chocolate button into the centre of each cookie while still warm.
